Kwaytiow Paht Ki-mao (Stir-fried rice noodles with pork and chilies)

From the terrific Real Thai: The Best of Thailand’s Regional Cooking*.

The rice noodles are cooked by simply pouring boiling water over them in a bowl and letting stand a few minutes. An easy way to make them bite-sized is to just use scissors.

The pork is cut into short strips and then fried in garlic (of course) and fresh chilies (serranos).

We like lots of greens. Holy basil (bai ga-prao) would be best, but this time we used the common sweet basil and some mint.

Add some fish sauce and tomatoes and you are good to go.

Smoky dried tomatoes

Start with home-grown Roma plum tomatoes…

Cut them in half lengthwise. Smoke over indirect heat…

…until nice and smoky.

I finished them in low oven with door ajar…
